Ingredients
- 1-2 jalapeño chillis
- 3 small mangos, cut into small cubes
- 1 red pepper, finely diced
- ½ cucumber, peeled and finely diced
- 1 red onion, diced
- ½ bunch of fresh coriander, chopped
- 2 garlic cloves, finely chopped
- ¼ tbsp each of salt, chilli powder and ground cumin
- Black pepper from the mill, freshly ground to taste
- 3 tbsp lime juice
- 1 tbsp cider vinegar

Method

1Cut the jalapeño in half, remove the seeds and skins, rinse, dry and cut into small cubes.

2Mix the prepared jalapeño with the diced mango, paprika, cucumber and onion in a large bowl. Add salt and the remaining spices and mix. Season everything with lime juice and cider vinegar.

3Leave covered in the fridge for one hour before serving with the shrimp tacos.

4You can store mango salsa in an airtight container in your refrigerator for up to two days. However, mangoes become increasingly softer and the texture of the salsa will change.
