Filling:
- 100 g soft butter
- 100 g brown sugar
- ½ tsp ground cardamom
- 3 tsp cornstarch
Dough:
- 75 g sorghum flour
- 125 g rice flour
- 100 g potato starch
- 1.5 dl lukewarm water
- 1 dl kefir (room temperature)
- 80 g sugar
- 75 g soft butter
- 12 g dry yeast
- 20 g psyllium husk (HUSK)
- 1 tsp xanthan gum
- 2 tsp baking powder
- 1 egg (room temperature)
- 1 tsp vanilla sugar
- ½ tsp salt
- ½ dl heavy cream
Sugar Syrup:
- 50 g sugar
- ½ dl cold water
Cardamom Sugar:
- 1 tbsp sugar
- ½ tsp ground cardamom

Method

1Preheat Oven: Preheat the oven to 190°C (fan).

2Prepare Dough: Mix all dry ingredients together. Add water, kefir, and egg, and mix until the flour is absorbed. Add butter and mix well for about 5 minutes at medium speed until smooth.

3Roll the Dough: Transfer the dough to a floured surface (use rice flour), sprinkle a little flour on top, and gently roll it out into a rectangle approximately 50 x 30 cm.

4Add Filling: Spread the filling evenly over the dough. Fold the dough in half lengthwise to create a rectangle of 50 x 15 cm. Cut the dough into 8 equal pieces. For each piece, cut three equal strips up to 1 cm from the folded edge (leaving them connected at the top). Braid the strips and twist them into a knot, ensuring the seam is placed underneath.

5Proof: Line a cast-iron pot with parchment paper and place the twists inside with the seams facing down. Cover with a lid and let them rise for 60 minutes.

6Bake: Heat the cream just below boiling and pour it over the twists once they are proofed. Bake at 190°C (fan) for about 40 minutes, the first 20 minutes with the lid on.

7Prepare Sugar Syrup: While the twists bake, heat sugar and water in a small saucepan over medium heat without stirring. Simmer until the sugar melts. Reduce the heat to low and keep the syrup warm until needed.

8Finish: Brush the freshly baked twists with the sugar syrup and sprinkle with cardamom sugar. Allow to cool slightly before removing them from the pot.

9Serve: Enjoy the twists warm with a good cup of coffee or hot cocoa.
