The world's easiest casserole bread didn’t receive its name for nothing. It has a short ingredient list and requires no kneading, so you avoid sticky hands. The bread is baked at a high temperature, resulting in a crisp and chewy crust, while staying moist and airy on the inside.

  • 600 ml water
  • 10 g yeast
  • 1 tsp. honey
  • 450 g wheat flour
  • 200 g whole grain flour
  • 1 tbsp. flaky salt

    Place water, yeast, and honey in a bowl and stir until the yeast and honey are dissolved.

    Add wheat flour and whole grain flour, then add salt. Mix the dough thoroughly.

    Cover the dough and let it rise in the refrigerator overnight (10–12 hours).

    Place a cast iron casserole in the oven and preheat it with the oven to 250°C (fan-assisted). Once both the oven and the casserole are thoroughly heated, remove the casserole from the oven. Sprinkle flour at the bottom of the casserole and pour in the dough.

    Add the lid to the casserole and return it to the oven. Bake the bread for 30 minutes. Then lower the temperature to 225°C and bake for another 10–15 minutes without the lid.

    When the bread is done and golden brown, take it out of the oven. Turn the bread out onto a cooling rack and let it cool before slicing.
